If you think Florida Ave. in Seminole Heights is “new” to the hip scene, think again. Back in 2010, the husband and wife duo of Greg and Michelle Baker set out to create a restaurant with a great atmosphere and great quality food. This culmination of ideas created The Refinery, and the Baker’s still strive to improve each day they lay menus on their tables.
SubAp! spoke with Greg, Co-Owner and Chef of both The Refinery and Fodder & Shine (the Baker’s second restaurant on Florida Ave.) The main goal in opening The Refinery was to provide food through sustainable means while allowing guests to feel welcome and comfortable. Greg mentioned part of that comfort comes down to price, “good food is often wasted on people who can afford it.” He wanted their restaurant to be somewhere people could enjoy without it needing to be a special occasion.
When The Refinery was in its earliest stages, it was a total 80’s Punk Rock DIY-type opening, “we had half the money we needed to open but we went for it” Greg told SubAp! “If you really want something to happen you have to make it work.”
With that same hard work and dedication, The Refinery continues to be driven nearly 7 years later. Not only do they provide local, sustainable products (with produce and dairy coming from under a 150-mile radius) but the menu has never featured the same exact dish twice! It might not be the easiest route, but the Baker’s know that, “while others claim to [be sustainable and local,] we actually do it.”
The Refinery is open evenings Sunday through Thursday 5-10PM, Friday and Saturday 5-11PM. Additionally, come in for weekend brunch Saturday and Sunday from 11-2:30PM!
The Refinery’s push to be better all the time is now expanding to something you could be a part of! The Refinery is looking for a new “Baller” cook. They seek someone who knows more than the basics, has a mindset that matches their ethos, meshes well with their group of skilled creative-weirdos, has dreamy eyes, and loves long walks on the beach.
